Innovative ideas to increase rice consumption.
This factory processes Korean traditional rice cake, or tteok.
When the rice cake is put inside a machine that makes rice cake bars, one comes out wrapped in fish cake batter.
Once fried in oil, the rice cake bar becomes a new kind of tteok that can be used to make tteokbokki, a popular street food in South Korea.
This new type of rice cake was manufactured to make tteokbokki more appealing. The main ingredient is Gyeonggi rice that’s expensive, but also high-quality.
“To give it a new taste, the tteokbokki is coated in fish cake. And though the price is a bit expensive, consumers reacted positively to the improved taste.” Another business combines rice cakes with sausages. They can be prepared in various ways, such as tteokbokki, and has recently been a popular part of school lunches.
“We've maximized sales by combining rice cakes with sausages and selling them in convenience stores or using them for school lunches. I think it'll also contribute to the promotion of rice consumption.”
Domestic rice consumption in recent years is roughly 155 grams per person, per day, which is only half of what it was in the 1990s.
That's why developing a variety of rice-based foods is an urgent task.
“Since food trends have changed a lot and consumer needs are diversifying, developing various types of foods to promote rice consumption is needed.”
